thank you for this post! my guy's crazy about outback's ribs, so i've been looking for this recipe for 2 months now... i can't wait to try it! thanks again!:D
I'm so glad you found this! The source is an Outback chef who appeared on a local television program. Let us know how they turned out for you.
Take it from a 5 year Outback Kitchen Manager....this ain't how they do it! But don't worry. It's hard to screw up baby backs if you:
Pull the membrane off the back side of the rack and rub the meat with a dry rub. There are some good ones at the store or surf the net for a recipe that sounds good. If you like the smell of your rub, chances are you'll like the taste, too.
Outback cooks them in a pressure smoker, but your grill will work fine.
Cook them slowly on a cooler spot on your grill. Put some mesquite chips in a metal pan on the hottest area of your grill (wet ones smoke more). About 1/4 of the cook time should be on med-high temp with meat down. The rest over a lower heat with the bones down. Don't over cook them. They dry out easily. When the meat is pulling back from the ends of the bones, test them by pulling 2 bones apart. If that is easy to do, there done.
Brush them with your favorite BBQ sauce and heat another 3-4 minutes with the bones down over the low heat. This will cook out some of the vinegar taste of the sauce for a milder flavor.
ENJOY!!!
Unclemikey,
WOW! Thanks so much for the help with this recipe.
I am so disappointed. The chef from our local Outback was on the local news summer segment on restaurant bbq ribs and this was Outbacks presentation. I guess I should stop thinking if it's on TV it's got to be true!
Thanks again for setting the record straight. Can't wait to have a chance to try your version!
Hope you stop by again soon.
