mind you not to over mix your batter, mix to combine liquid and dry ingredients, there will be small lumps when done mixing. To cook the pancakes after placing batter on hot griddle or in hot skillet let pancakes cook undisturbed until bubbles appear on the surface and the edges appear dry around the pancake. Then flip the pancake and cook second side about half the time you did for first side.
Cracker Barrel Buttermilk Pancakes

2 Cups sifted all-purpose flour
2 Teaspoons baking soda
1 Teaspoon salt
1 heaping teaspoon sugar
2 eggs
2 Cups buttermilk
In a large bowl beat all of the ingredients with a spoon.
Using a 1/4 cup measure cup pour batter onto a lightly oiled hot griddle.
Serve with real butter & real maple syrup
