Gala apples are a good choice for salads since they tend not to brown as easily as other apples..
Green Salad with Apples and Pecans

6 ounces pecans, coarsely chopped
1½ pounds mixed greens
3 Gala apples, thinly sliced
1 red onion, coarsely chopped

Heat oven to 350 degrees F.
Toast pecans on baking sheet 5 minutes, or until fragrant and lightly toasted. In large serving bowl combine greens, pecans, apples and red onion. Toss to combine.

Cranberry Vinaigrette
1/4 cup fresh or frozen cranberries, thawed
1/4 cup balsamic vinegar
1 tablespoon chopped red onion
1 tablespoon sugar
1 teaspoon Dijon mustard
1 cup olive oil

Puree cranberries in processor until smooth. Add vinegar, onion, sugar and mustard and process until well blended. With processor running, gradually add oil and process until well blended. Transfer to medium bowl. Season to taste with salt and pepper. (Can be made 1 day ahead. Cover; chill. Bring to room temperature and whisk before using.)
